Vegan Vanilla Espresso Mousse


1/4 Cup of RISE Brewing Co Vanilla Oat Milk

1/3 Cup of RISE Brewing Co Original Black Nitro Cold Brew

3 Tablespoons of maple syrup

¾ block (about 12 oz) extra-firm regular tofu, drained and crumbled

1 Cup of vegan chocolate chips (55% to 60% cacao)

Toppings: Vegan whipped cream

Garnish: Espresso beans


1. Pour Vanilla Oat Milk in a saucepan and add in the RISE Original Black coffee and maple syrup. Stir over a medium-low heat until simmering and let cool.

2. Place the tofu in a blender and add the chocolate chips.

3. Next, add simmered oat milk mixture to the tofu mixture and blend again for 30 seconds to 1 minute, or until smooth.

4. Spoon the mixture into four, 8 oz ramekins and refrigerate for 4 hours, or up to 24 hours.

5. Serve chilled with a generous dollop of vegan whipped cream and garnish with espresso beans!
