London Fog Cookies 

INGREDIENTS

½ Cup RISE Brewing Co Nitro London Fog

½ Cup Vegan Butter

1 Cup Granulated Sugar

1 Egg

2 Egg Yolks

1 Teaspoon Vanilla Extract

2 ½  Cups All Purpose Flour

½  Teaspoon Baking Powder

1 Teaspoon Baking Soda

Salt

2-3 Teaspoons Earl Grey Tea Leaves

Garnishes 

Earl Grey Tea Leaves (lightly crushed)

Sugar

DIRECTIONS

1. Preheat the oven to 350 degrees F.

2. Combine all-purpose flour, baking soda, baking powder and whisk until mixed well. Set aside.

3. Using either a mortar and pestle or food processor, grind earl grey leaves into a finely ground powder, sift through a fine mesh sieve.

4. In a separate bowl, cream together sugar, butter and RISE Co Nitro London Fog

5. Then beat in egg yolks and whole egg, vanilla and your finely ground tea leaves.

6. Slowly add the flour mixture to the wet mixture, blend on low speed until combined. Make sure to scrape the sides and bottom of bowl to get any dry bits from your flour mixture.

7. Lightly flour surface of counter or cutting board and begin to roll your dough from the center out rotating and rolling in all directions until at desired thickness. We rolled out our dough to about a 1/4 inch thick.

8. Use desired cookie cutter to cut dough and then place dough onto lightly greased cookie sheet (or parchment paper lined cookie sheet). Place your cookies approximately an inch and a half apart on a cookie sheet.

9. Take your extra earl grey tea leaves and sprinkle the tops of cookies. Do the same with a small pinch of sugar.

10. Place in over and bake between 14 and 17 minutes or until edges are golden. 14 minutes gave some really delicious soft cookies for snacking, while the 17 minute batch gave a crisper cookies, perfect for dipping in your favorite hot beverage!
