When it comes to eating healthy, breakfast seems to hold the power to make or break the day for me. If I start my morning off with fruit or an egg white scramble, I feel like I’m already on track and more likely to choose nourishing foods as the day goes on.
Still, more often than not, I find myself scrambling to get out the door in the morning, reaching for whatever pre-made food is most convenient. When I’m really in a crunch for time, I leave the house on an empty stomach.
In a recent attempt to ensure I actually ate the most important meal of the day, I revisited a recipe that I once attempted to make years ago: overnight oats, a creamy, chilled mixture of uncooked oats and milk. This time, I added a twist by swapping milk for a RISE Oat Milk Latte.
What’s so great about overnight oats, anyways? For starters, the prep time is less than five minutes. If you make it at night, it’s ready to go in the morning with no additional prep needed (although you can enjoy overnight oats heated up). Overnight oats is also a meal that is packed with nutritional value and will keep you full until lunch time. It’s particularly great for sweltering August days when you’re craving oatmeal but don’t want to eat anything hot. Best of all, you get your breakfast and a cup of coffee all in one!
RISE Brewing Co Overnight Oats
- 1 cup of old-fashioned rolled oats
- 2 tablespoons chia seeds
- ½ cup nonfat Greek or vegan yogurt
- 1 RISE Latte (Oat Milk Latte, Oat Milk Mocha or Classic Latte -- you pick!)
- Fruit: strawberries, blueberries, bananas
- Peanut or almond butter
- Shredded coconut
- Combine rolled oats and chia seeds in a mason jar or container of your choice. (Chia seeds help to give the overnight oats a pudding-like consistency, not to mention their nutritional benefits; they are a great source of omega-3 fatty acids, antioxidants, fiber, iron and calcium.)
- Next, add yogurt. The yogurt will give your oats an extra creamy consistency.
- Pour one RISE latte coffee can of your choice over the oats and stir the mixture thoroughly.
- Cover the oats and chill in the fridge overnight, or for at least four hours.
- Optional: add your favorite toppings and enjoy!
